Wyoming’s First Lady Cooks Up Solutions to Food Insecurity

Wyoming’s First Lady Jennie Gordon is taking a personal hand to tackle food insecurity in Wyoming.

Food insecurity, defined as being “without reliable access to a sufficient quantity of affordable, nutritious food.” This is an issue of particular concern to the First Lady, as it is no doubt being exacerbated by the panic buying at the state’s groceries stores and the economic troubles facing countless Wyoming families. To achieve the widest reach possible, she is collaborating with the Wyoming Hunger Initiative and the Wyoming Beef Council to produce a series of videos.

This collaboration serves multiple purposes. Wyoming’s beef industry is another casualty of the current economic climate, one that is easily overlooked. The three videos currently posted on the Wyoming Beef Council’s Youtube page all feature recipes for complete meals to feed a family of 5 incorporating beef and few other ingredients, all available for purchase under $20. They can even be cooked by someone as young as 7 years old. The First Lady hopes these videos will find the right audience and help children and families avoid hunger and poverty during these unprecedented times.
